Ingredients:
3 tomatoes / 1 cup tomato puree
1 large brinjal /3 small
2 medium sized onions
9-10 sps sunflower oil
2 sps peanuts
3 pods garlic
4 green chillies
4 red chillies
1 sp jeera
4-5 pinches of salt
2-3 pinches of chilly powder
Method:
- If you have tomatoes,slice and fry them in 2spns of oil till it becomes a paste-like consistency.I prefer mashing it or even grinding them 2seconds for a fine paste.Tomato puree saves this time.
- First heat oil in a sauce pan.Then add jeera,green and red chillies,skin peeled peanuts and finely chopped garlic and fry for a min on low flame.
- Add long slices of onion to it and fry for 2mins.
- Now add long and slender sliced brinjal pieces and close the lid.Allow them to cook on low flame for 5-7mins.
- Salt the tomato puree or mashed tomato and add it to brinjal pan.
- Mix evenly adding chilly powder.Close the lid for 3-4 mins on low flame.
- Switch of the heat,wait for 4-5 mins closing the lid.Then serve hot.
- Great side dish for rotis with raita.Tastes good even with rice.
