Brinjal-Tomato curry

Brinjal - Tomato curry:
Preparation time-20mins
Serves-3
Ingredients:
3 tomatoes / 1 cup tomato puree
1 large brinjal /3 small
2 medium sized onions
9-10 sps sunflower oil
2 sps peanuts
3 pods garlic
4 green chillies
4 red chillies
1 sp jeera
4-5 pinches of salt
2-3 pinches of chilly powder
Method:
  1. If you have tomatoes,slice and fry them in 2spns of oil till it becomes a paste-like consistency.I prefer mashing it or even grinding them 2seconds for a fine paste.Tomato puree saves this time.
  2. First heat oil in a sauce pan.Then add jeera,green and red chillies,skin peeled peanuts and finely chopped garlic and fry for a min on low flame.
  3. Add long slices of onion to it and fry for 2mins.
  4. Now add long and slender sliced brinjal pieces and close the lid.Allow them to cook on low flame for 5-7mins.
  5. Salt the tomato puree or mashed tomato and add it to brinjal pan.
  6. Mix evenly adding chilly powder.Close the lid for 3-4 mins on low flame.
  7. Switch of the heat,wait for 4-5 mins closing the lid.Then serve hot.
  8. Great side dish for rotis with raita.Tastes good even with rice.
