Ingredients:
5-6 Brinjal
20 ml sunflower oil
1 cup urad dal
1 cup chena dal
1/2 cup dry dhaniya
5-8 redchillies
5 pods of garlic
lemon sized tamarind paste
5 pinches of salt
Method:
- Fry urad dal,chena dal,garlic and red chillies in a pan for 2min on low flame,by continuous mixing.No need of oil.
- Now allow it to cool in a wide plate.
- Meanwhile heat oil in a deep frying pan.When hot put thin,longitudinally chopped brinjal pieces.Fry them for 2mins closing the lid on low flame.
- Grind the dal and chillies mix from the plate,adding some salt and tamarind into a rough powder.I mean dont make it very smooth and fine.
- To the brinjal,add this powder and mix evenly.
- Fry the powder and brinjal together for 2-3mins till all the oil is absorbed by the powder.
- Have a great meal with this curry in steaming plain rice.
- You can prepare this powder and store it in air tight container to save time in hurry.
- I even use this powder with other vegetable curries like with beans.
