Vankaya Podi kura

Vankaya podi kura:
Preparation time-20mins

Ingredients:
5-6 Brinjal
20 ml sunflower oil
1 cup urad dal
1 cup chena dal
1/2 cup dry dhaniya
5-8 redchillies
5 pods of garlic
lemon sized tamarind paste
5 pinches of salt
Method:
  1. Fry urad dal,chena dal,garlic and red chillies in a pan for 2min on low flame,by continuous mixing.No need of oil.
  2. Now allow it to cool in a wide plate.
  3. Meanwhile heat oil in a deep frying pan.When hot put thin,longitudinally chopped brinjal pieces.Fry them for 2mins closing the lid on low flame.
  4. Grind the dal and chillies mix from the plate,adding some salt and tamarind into a rough powder.I mean dont make it very smooth and fine.
  5. To the brinjal,add this powder and mix evenly.
  6. Fry the powder and brinjal together for 2-3mins till all the oil is absorbed by the powder.
  7. Have a great meal with this curry in steaming plain rice.
  8. You can prepare this powder and store it in air tight container to save time in hurry.
  9. I even use this powder with other vegetable curries like with beans.
